Green Beans Almondine

This simple recipe using fresh green beans is delightful at any time of the year, but is a tradition to be enjoyed at Thanksgiving.

Ingredients

 1-2 tablespoons olive oil
 2 cloves of garlic, chopped
 3 cups fresh green beans, ends trimmed
  cup slivered almonds
 2 tablespoons soy sauce or gluten-free tamari
 Freshly squeezed lemon juice to taste
 freshly ground pepper to taste

Instructions

Heat oil in a large skillet over medium heat. Add garlic and sauté 1 minute. Add green beans and sauté 10 minutes or until beans are cooked to desired tenderness. Beans should still be bright green in color.

Place almonds in a small pan over medium-low heat. Stir and toast almonds 3 to 4 minutes until golden and fragrant.

Remove hot green beans to a serving bowl. Toss lightly with soy or tamari, and lemon juice. Season with black pepper to taste.
